Cheesy Enchilada Dip is a beef and bean cheesy enchiladas recipe turned into a delicious a dip served as an appetizer or snack.
I love it when I have all the ingredients for a recipe stocked in my pantry. Today’s Cheesy Enchilada Dip is one that is easy to make for last minute guests, alsodelicious for dipping or a burrito or enchilada filling.

Cheesy Enchilada Dip Recipe
This Cheesy Enchilada Dip Recipe makes aquick appetizer (30 minutes). It’s perfect for when you get a last-minute invite, or the perfect dip, or quick for last-minute guests!
We’re a enchilada family, so bringing our favorite ingredients together in a cheesy dip is perfect for football season!
Ingredients for Beef Enchilada Dip
- Ground beef, or ground turkey
- Salt and pepper
- Mexican spice (or cumin or chili powder)
- Green chilies
- Black beans
- Red enchilada sauce (I use Trader Joe’s)
- Whole olives
- Mexican cheese
- Rice (optional)
How to serve enchilada dip:
- Serve with chips
- Main dish meat for tacos, taco salad, burritos, or enchiladas
- Add to a wraps
- A dip with mixed fresh vegetables
- Make quesadillas with the leftovers
- Add it to scrambled eggs

How to make the recipe
- In a large skillet over medium-high heat, cook the ground beef (you can use ground turkey, too) and break it up with a wooden spoon. Cook and drain the liquid.
- Add the taco seasoning, green chiles, and enchilada sauce. Stir in the butter and simmer.
Sprinkle in the cheese and cook until melted through, about 5 minutes.
Mix and bake in an 8×8 pan for 20 minutes. You can always double the recipe for a 9 x 13 pan.
Optional to add more cheese on top!
Serve right away. You can top the skillet dip with sour cream, salsa, scallions and cilantro.
Serve hot with chips for dipping.
Perfect for game day or any small gathering!
Secret: Add whole olives
The secret to a good Cheesey Enchilada Dip? In my opinion, whole olives!
Whole olives remind me as a kid of many taco feasts out camping with our family friends, My mom, Clara, and Avis were the best camp cooks in southern Oregon!
For me, this is the ultimate wintertime, party dip! But remember, this is also greatas a meat mixture for tacos, enchiladas, burritos, or taco salad!

Ingredients
- ½ pound ground beef, or ground turkey, drained
- 2 Tbsp butter
- Salt and pepper
- 2 tsp. Mexican spice, or 1 tsp. cumin + 1 tsp. chili powder
- 1 7 oz green chilies, diced
- 1 15 oz Bush’s black beans, drained
- 1 12 oz jar red enchilada sauce (I use Trader Joe’s)
- 1 6 oz whole olives, drained
- 2 cups Mexican cheese, shredded (plus more for sprinkling on top)
- ½ cup cooked rice, optional
Instructions
Preheat oven to 350 degrees. In a medium pan, cook the ground beef until done (well browned). Drain off any fat. Mix in the butter, Mexican spice; salt and pepper to taste.
In a large bowl, combine the chilies, black beans, enchilada sauce, whole olives, and cheesewith the meat.Stir together; pourthe mixture into a 8×8 baking pan. (Optional to add rice)
Bake for 20 minutes, or until bubbly and hot. Serve with more cheese on top, with chips, vegetables, or as a meat mixture for tacos, enchiladas, burritos, or taco salad.
Optional to serve with sour cream, finely chopped green onions, and chopped tomatoes on top or on the side.

This recipe hit the spot – fantastic! I used only 1/2 lb ground beef and then added 1/2 cup cooked rice, which worked well. Super tasty and the few leftovers that we had were tucked into breakfast burritos the next day. Thank you for this great recipe!Rahul @ samosastreet —Reply
