- In a large pot or dutch oven, heat the butter over medium heat. Add the onion, carrots, celery, ½ teaspoon salt, ½ teaspoon pepper and cook for 10 minutes or so, until softened.
- Add the garlic and cook for another 30 seconds.
- Stir in the chicken stock, bay leaves, thyme and chicken thighs. Bring to a boil, then reduce to a simmer.

Ingredients
- 2 tablespoons butter or olive oil
- 1 large onion chopped
- 2 large carrots chopped
- 2 stalks celery chopped
- 3 cloves garlic minced
- 8 cups chicken stock
- 2 bay leaves
- 1/2 teaspoon dried thyme or 3 sprigs fresh thyme
- 1 pound skinless boneless chicken thighs
- 9 ounces gluten-free egg noodles I use Jovial Foods Tagliatelle
- Salt and pepper to taste
- 1/4 cup fresh parsley finely chopped
Instructions
In a large dutch-oven, heat the butter over medium-high heat. Add the onion, carrots, celery, ½ teaspoon salt, ½ teaspoon pepper and cook for 10 minutes or so, until softened.
