INGREDIENTS IN GLUTEN-FREE PINEAPPLE UPSIDE DOWN CAKE

All Purpose Gluten-Free Flour - I like to use Bob's Red Mill 1:1 Flour. This flour includes xanthan gum. Add xanthan gum if your flour does not have it in.

Baking Powder - A combination of baking powder and baking soda adds lift and rise to the cake.

Baking Soda - Works with the baking soda to create the perfect cake texture.

Salt - A bit of salt helps to balance the sweetness of the cake.

Granulated Sugar - This is the sweetener we'll use for our cake.

Butter - Soften half of your butter for the cake batter and melt the other half for the topping.

Egg Whites - Separate your eggs and let the whites come to room temperature before mixing.

Milk - Any type of milk will work here. Choose dairy free milk if you like.

Vanilla Extract - A must for almost any cake recipe, vanilla is warm and rich. Add 1 teaspoon vanilla extract.

Brown Sugar - Brown sugar helps to create the caramelized topping here.

Water - A little bit of water dissolves the brown sugar in the topping.

Pineapple Rings - Canned Pineapple slices in the shape of rings are perfect for this recipe. Cut the pineapple slices in half so you can fit more on the cake. Remove excess pineapple juice with a paper towel. Some have used pineapple chunks, but I don't recommend it.

Maraschino Cherries - These bright red candied cherries add a fun pop of color to this gluten-free dessert.

EQUIPMENT NEEDED FOR THIS GLUTEN-FREE PINEAPPLE UPSIDE DOWN CAKE

Baking pan - You can use an 8 inch and 9 inch both works well. I've used a 9-inch pan. You can also use a 9-inch springform pan. Springform pans have a removable bottom and sides.

Whisk - I like to use a stainless-steel whisk.

Mixing bowls - These Pyrex mixing bowls come in handy.

HOW TO MAKE GLUTEN-FREE PINEAPPLE UPSIDE DOWN CAKE

  1. To make the topping, combine melted butter, brown sugar and water.
  2. Spoon the mixture into the pan, then arrange pineapple and cherries in the pan as shown.
  3. In a medium mixing bowl, whisk the flour, baking powder, baking soda, and salt together, set aside.
  4. In a separate medium mixing bowl, beat the butter and sugar together until combined.
  5. Add the egg whites and mix until combined. Then add the milk and vanilla and mix until combined.
  6. Add the dry ingredients to the wet ingredients and mix on low speed just until combined.
  7. Spoon the cake batter carefully into the pan, trying not to disturb the topping.
  8. Bake as directed in the recipe below, or until done. Allow cake to cool for a bit before inverting onto a plate.

TIPS FOR MAKING THE BEST GF PINEAPPLE UPSIDE-DOWN CAKE

Prep the cake pan - You don't want this beautiful cake sticking to the pan and being ruined.

Dry off the pineapple and cherries - Use a paper towel and remove excess liquid so the cake doesn't go soggy.

Cool the cake - Cool the cake for 20 minutes and then flip it out.

DOES PINEAPPLE UPSIDE-DOWN CAKE NEED TO BE REFRIGERATED?

This cake can be kept out in an airtight container once cooled for up to 24 hours. Any longer than that, I suggest you refrigerate it. It will last for up to 4 days.

WHY IS MY GF PINEAPPLE UPSIDE-DOWN CAKE SOGGY?

You need to dry off the excess pineapple juice from the pineapple slices as well as the cherries with a paper towel prior to placing it in the cake batter. The added moisture in the pineapple slices and cherries will make the cake soggy.

HOW TO FLIP A GLUTEN-FREE PINEAPPLE UPSIDE DOWN CAKE

The most fun part of making this gluten-free pineapple upside down cake is the reveal! You will be flipping the cake over to reveal the pineapple slices and cherries that cooked at the bottom of the pan with all of that brown sugar, creating a caramelly, syrupy cake topping.

Prep your cake pan - To ensure that your gluten-free pineapple upside down cake releases cleanly from your pan, make sure that you prep your cake pan properly. The pan should be coated with a thin layer of grease (butter or shortening) before filling it.

Allow it to cool - When the gluten-free pineapple upside down cake comes out of the oven, allow it to cool slightly, but not all the way. Set a timer for 20 minutes and then flip your cake.

Loosen the sides - You want to use a flexible spatula to go all the way around the outside of the cake pan to make sure that the sides are loose.

Use a plate - Finally, place a large plate or platter on top of your gluten-free pineapple upside down cake that's still in the pan. Hold the pan and the plate together and flip the whole thing over. Revealing the pineapple slices and cherries.

When working with or measuring gluten-free flour for gluten-free pineapple upside down cake, spoon the flour into the measuring cup and level. Do not scoop your measuring cup into the gluten-free flour.

The best method really is to weigh the gluten-free flour, but I don't have the ingredient weights for all my recipes yet. Also ensure you use the correct flour. Gluten-free flour blend is different to a gluten-free all-purpose flour.

Ingredients

For the cake:

  • 4 tablespoon butter
  • ½ cup packed brown sugar
  • 2 tablespoon water
  • 16-ounce can pineapple rings drained and halved
  • 6 maraschino cherries, halved

Instructions

    Preheat oven to 350°F (180°C). Position the oven rack in center of oven. Grease an 8x1½” round cake pan; set pan aside.

    For the Topping:

      1. Melt the butter in a small mixing bowl in the microwave. Add brown sugar and 2 tablespoons of water and mix until combined.
      2. Spoon the sugar/butter mixture into the pan.
      3. Arrange pineapple and cherries in the pan.


    For the Cake:

      1. In a medium mixing bowl, whisk the flour, baking powder, baking soda, and salt together; set aside.
      2. In a separate medium mixing bowl beat the butter and sugar together until combined.
      3. Add the egg whites and mix until combined.
      4. Add the milk and vanilla and mix until combined.
      5. Add the dry ingredients to the wet ingredients and mix on low speed just until combined.
      6. Spoon the cake batter carefully into the pan, trying not to disturb the topping.
      7. Bake for 35–40 minutes or until a wooden toothpick inserted near center comes out clean.
      8. Cool cake in pan on a wire rack for about 20 minutes.
      9. Loosen sides and invert the warm cake onto a plate.
