This Greek chicken souvlaki gyro sandwich recipe uses fresh marinated chicken which is cooked over a hot grill and then stuffed into a warm pita and topped with homemade tzatziki, tomato, onion, lettuce, and fresh dill.

Ingredients
For The Greek Chicken Tenders:
3 large chicken tenderloins
1/2 tablespoons Greek seasoning
2 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
For The Tzatziki Sauce:
1 cup Greek yogurt
2 tablespoons finely chopped cucumber
1/2 tablespoon finely chopped red onion
1 tablespoon finely chopped fresh mint
1/2 tablespoon finely chopped fresh dill
2 tablespoons freshly squeezed lemon juice
1 tablespoon olive oil
Salt, to taste
1/2 tablespoon water, more as needed
For Assembling the Sandwich:
1 large pita, warmed
1/4 cup coarsely chopped lettuce
2 tablespoons tzatziki
3 cooked chicken tenderloins
2 tablespoons finely chopped tomato
1/2 tablespoon finely chopped red onion
2 tablespoons coarsely chopped fresh dill
Steps to Make It
For the Greek Chicken Tenders
Gather chicken ingredients.
Place the boneless chicken tenderloins in an airtight container and add Greek seasoning, olive oil and lemon juice. Let the chicken marinate for at least 30 minutes and up to 48 hours.
For the Tzatziki
Gather the tzatziki ingredients.
While chicken marinades, in a small bowl add greek yogurt, chopped cucumber, chopped red onion, chopped fresh mint, chopped fresh dill, 2 tablespoons lemon juice, 1 tablespoon olive oil and salt. If the sauce is too thick, add 1/2 tablespoon of water at a time until desired thinness is reached.
For the Sandwich
Gather remaining ingredients and pre heat grill to medium high.
Remove chicken from marinade and grill until the center is no longer pink and the exterior is golden brown. Remove from heat and set aside.
Place a piece of tinfoil on your countertop. Add the warmed pita to the middle of the tinfoil and top with chopped lettuce, tzatzikisauce, chicken tenders, tomato, red onion, and dill. Gently lift the sides of the pita up to create a taco-like shape to your chicken gyro.
Pull the tinfoil tight around the sandwich (to help keeps it shape) and serve.
