It’s always a good idea to bake pies on a baking sheet. Not only does it make it easier to get the pies in and out of the oven, but a sheet pan will catch any filling that bubbles over. It’s much easier to clean a foil lined baking sheet than the bottom of your oven.

    Hi I baked a pie on top of a cookie sheet for the first time. My apples were not cooked properly and the crust at the bottom could have baked linger. I thought it was because I used the cookie sheet. Please advise. But I also put the pie back in the fridge for about 15 minutes the keep the butter crust from shrinking and the pie edge from shrinking into the pie dish. Maybe I needed to bake it longer cause the fruit was colder. Thank you.

      Gitta,I'm sorry The Hungry Traveler didn't include this in his tip. Whenever you put a cookie sheet under a pie pan, a cake pan, etc, you may have to adjust your cooking time to accommodate for that additional layer of metal in under your oven. This isn't always the case, but always be prepared for it. This is another reason why you shouldn't rely solely on cooking times to determine when your food is finished baking. Be sure to consider the outside appearance of the food, and if possible, check for the doneness on the bottom or inside of the food you are baking. I hope this helps and happy baking.
