Not to be confused with bread and butter pudding, bread pudding is a fairly substantial comfort food. It’s really warming, sweet and spicy and is perfect for when the seasons start to change and the weather gets cooler.

The real key to this recipe is to not over bake it. You don’t want to dry it out like traditional banana bread as it’ll lose the pudding texture, so make sure you keep an eye on it while it’s cooking!

Enjoy with some fat free yoghurt, or for a real treat you could even serve it warm with some low calorie ice cream – it’s sooo moreish!!

What diets is this Banana Bread Pudding suitable for?

This Banana Bread Pudding recipe is suitable for dairy free and vegetarian diets.

It can be made suitable for gluten free diets by swapping the following ingredients out for gluten free alternatives;

  • Self raising flour

Please make sure to double or triple check all of your ingredients if you’re cooking for people with allergies.

Do you need any special ingredients to make this Banana Bread Pudding?

Sukrin make a range of sugar substitutes that are all natural and free from calories and carbohydrates. Most importantly for us, they don’t have that nasty aftertaste.

They do a granulated sugar replacement, a brown sugar replacement and an icing sugar replacement. You can use them all just as you would their ‘normal’ counterparts and since discovering Sukrin we won’t use anything else.

Sukrin Gold is the brown sugar replacement and can be found on Amazon. If you can get Sukrin Gold you can use normal sweetener. However, the Sukrin Gold does give the Banana Bread Pudding a nice golden colour, and a slightly different taste.

If you are using a powdered sweetener then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said, you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

I used some frozen bananas that I let thaw and it tasted just the same as if they had been fresh

Mixed spice

I didn’t have any mixed spice so used half teaspoon each of ground cinnamon, nutmeg and ginger

This is so easy to make and very light to eat

Next time I would add more bananas for more flavour. I also added a few sultanas (as I had them)

Ingredients

  • 50 g self raising flour
  • 4 eggs
  • 30 g granulated sweetener
  • 200 g mashed banana
  • 25 g sultanas
  • 2 tsp mixed spice

Instructions

  1. Preheat the oven to 160°c and line the bottom of a bread tin. Into a bowl add the mashed banana, flour, mixed spice, granulated sweetener and 2 eggs and mix well.
  2. Separate the remaining 2 eggs. Add the egg yolks to the mixture and in a clean bowl, whisk the egg whites to firm peaks.
  3. Fold the egg whites carefully into the mixture. Stir in the sultanas. Pour into the bread tin and bake for 35 minutes until just cooked.

Super fluffy! I didn’t add much sweetener but it wasn’t bad because I topped it with a little drizzle of honey and it was fantastic. Would definitely make this again!

Eek, just tried both banana bread recipes and both looked great but collapsed after they were taken out of the oven. I usually hand mix but used a mixer for these. Could this have created extra moisture (I’ve seen this to be a reason for banana bread collapse elsewhere). I’ve also noticed sadly anyone who has has a problem with the recipes doesn’t seem to have had a reply. I’m new to Nom and loving the recipes but would like to get this one right if I can. Thank you.

    Hi Marian,

    You may find that this banana bread sinks a little in the middle but it shouldn’t completely collapse. Be sure not to open the oven door until the cooking time is up. You could also try cooking it a little longer, and turning it upside down once it comes out of the oven and cool on a wire rack.
