Saf-instant® Gold Instant Dry Yeast | 30g |
Sugar | 300g |
Salt | 32g |
Shortening | 120g |
Milk Powder (optional) | 40g |
Water | 1200ml |
Magimix® Green (optional) | 10g |
Magimix® Softness (optional) | 20g |
Breadcrumbs | As needed |
FEATURED PRODUCT
PREPARE THE DOUGH
- Place all the dough ingredients into the mixer.
- Mix the ingredients for 3 minutes on low speed and 6 minutes on high speed.
- Final dough temperature should be approximately 26˚C.
- Place the dough into a bowl, cover and let it rest for 5 minutes.
SHAPING
- Divide the dough into 57 pieces at approximately 65g each.
- Round each dough into a ball and coat it with breadcrumbs.
- Place each coated dough on a parchment lined baking tray.
- Let the dough rest for 90 minutes at around 30˚C and at 80% humidity.
BAKING
- Preheat oven at 190˚C.
- Bake for 20 minutes at 190˚C or till uniformly golden brown.
- Let it cool to room temperature before serving.
