Here is an real easy recipe for a very fulfilling snack or meal. Some cooked fish and then add “whatever” you want, some spice for a kick and you have these crispy, flaky patties.

I was born in a fish loving land, a sweet land where we are known to eat fish for lunch and dinner; and also for snack in the form of “macher chop” (fish cutlets), fish fry (fish fillets coated in batter and deep fried) and a variety others. I remember my dida (grandma), creating these wonderful fish croquettes very quickly with leftover fish when we had those early evening cravings. The matter was more elaborate when we had guests – tiny, finger sized croquettes all in the exact same size and shape arranged neatly on a tray disappeared pretty quick. The small restaurant that sits near the train station in my home town still sits there drawing a big crowd with their special fish chop.. ah! unforgettable!

The salmon patties here is neither as pretty nor as professional. We never ate salmon back home for in West Bengal the love for fish is kind of limited to fresh water fish/river fish. We do not get much of those here and my kids still have not acquired the taste for salmon. They find it chewy as compared to Tilapia which they will readily eat. I actually made these tiny patties as lunch burgers. They were appreciated and eaten by my kids. I ate mine generously dipped in some sriracha.

These are fairly easy to do, especially if you have canned fish. I used the salmon fillets and steamed them; mixed all other things I had at hand and created these delectable patties. These are shallow fried in a pan. I bet they would have been a bigger treat if they were coated and deep fried like at back home, but for now I am happy this way.



Salmon Patties

Ingredients: (yields about 10 -12 small cakes)

  1. Oil for shallow frying
  2. 2 Salmon Fillets, broiled, boiled/steamed, baked or cooked in any other way (or same amount of canned salmon)
  3. 4 tablespoons, very finely chopped onions or green onions
  4. 2 garlic cloves minced
  5. 1 tablespoon grated fresh ginger
  6. 2-3 tablespoons chopped parsley or cilantro (or whatever herb you like)
  7. 1 teaspoon fresh lemon juice
  8. 1/2 teaspoon lightly roasted cumin seeds, crushed (optional)
  9. freshly ground black pepper ( I used a lot)
  10. salt
  11. 1 slice of bread, the edges removed (wholegrain/white)
  12. 6-7 saltine crackers (or about 4-5 tablespoons of bread crumbs) wholegrain , coarsely powdered

NOTE: Other things that may be used: finely chopped bell peppers, celery, other fresh herbs, red pepper flakes, hot sauce.

Any boneless fish may be used here.

I have used wholegrain bread and crackers; feel free to use the kind you like/have.



Preparation:

Combine all the above ingredients and mash them well together. Divide the mix in to approximately 10 – 12 equal parts; roll them into spheres and flatten each of them like a patty/burger.

Heat oil in a flat thick bottomed pan. Shallow fry them, each side about 5-7 minutes or until they are golden brown.

Serve hot with hot sauce/Cilantro Mint Chutney or your favorite sauce or condiment.

Serve them as snacks, at lunch or dinner time or as simple burgers between buns! Adapt them your way; they are pretty versatile.

    Yum! I make salmon patties using canned salmon , but not with the bread/crackers – thats a great idea. I need to revisit that!

    Yeah in Kerala we too love fish. I remember mostly every day there was fish . Love the patties they look so so good.
    How do you eget your pictures so bright. Do you use some special lights?

    Don’t use any special lights for my pictures, except the ones given by mother nature:-) no really.. I wish I had some set up and lights. I have to take pictures during the day and not direct sunlight (so no shadows).. My camera has a weak flash so night time is of no use for me. We have a sunroom which i use. When there is not enough bright light, i adjust the exposure compensation in the camera.. sometimes it works, sometimes I have discard the picture.

    I have now made these about 3 times and they are amazing!!!! I added an egg to help bind the ingredients together as mine were falling apart a little. I have them on lebanese bread with hummus and tabouli… sensational. Thankyou so much for sharing your recipe.
