Maitake

Also called Hen-of-the-wood, this is pound-for-pound the most flavorful mushroom around. You could definitely say we’re maitake fans. It’s extremely versatile, just as good sautéed with butter as it is on pizza. Yeah, these are amazing on pizza. But the flavor of the maitake is so good that we like to use it as a supplement to other mushrooms. Have a bunch of cremini mushrooms? Add in some chopped maitake to enhance that flavor. It’s a totally legal, performance-enhancing mushroom.

Shiitake

What’s cool about shiitake is that they need to be transformed the least. (You'll sometimes need to remove the stems if they feel tough and woody.) They have a pleasant, delicate texture as is, so we like to keep the cooking process for these round-capped mushrooms to a minimum. Drop them last-minute into a soup, or sear them hard and fast on a scorching skillet. And since shiitake mushrooms are on the less expensive side of the spectrum, it’s nice to make a bunch of them at a time. Don’t hold back. Feel empowered.
